Oseng Tongkol: A Delightful Indonesian Stir-Fry

Ingredients:

  • 1 medium-sized skipjack tuna (tongkol)
  • 100 grams green beans (buncis), thinly sliced
  • 1 medium carrot, coarsely grated
  • 4 shallots (bawang merah), thinly sliced
  • 4 cloves garlic (bawang putih), minced
  • 5 bird’s eye chilies (cabe rawit), sliced
  • 3 curly chilies (cabe keriting), sliced
  • Salt, to taste
  • Soy sauce (kecap), to taste
  • Pepper (merica), to taste
  • Oil for frying

Instructions:

  1. Prepare the Tuna: Begin by thoroughly washing the skipjack tuna. Once cleaned, shred it into bite-sized pieces and set aside.

  2. Prep the Vegetables: Slice the green beans diagonally and coarsely grate the carrot, ensuring they’re ready for quick cooking. Thinly slice the shallots, minced garlic, bird’s eye chilies, and curly chilies.

  3. Fry the Tuna: In a pan, heat a small amount of cooking oil over medium heat. Add the shredded tuna and fry until it’s half-dry, allowing the flavors to intensify. Once done, drain the tuna and set aside.

  4. Sauté Aromatics: In the same pan, using the residual oil, sauté the sliced shallots and minced garlic until fragrant. This step will create a rich base for the dish.

  5. Add the Chilies: Toss in the sliced chilies and stir-fry until aromatic, infusing the oil with their heat and flavor.

  6. Incorporate the Vegetables: Add the sliced green beans and grated carrot to the pan, followed by the fried tuna. Stir well to combine all the ingredients.

  7. Season the Mixture: Add just a splash of water—truly just a little!—to help steam the vegetables as they soften. Season with salt, soy sauce, and pepper to taste. Let everything cook together until the vegetables are tender.

  8. Final Touches: Taste the mixture and adjust the seasoning as necessary. Allow the dish to cook until the liquid has evaporated, ensuring a beautifully blended flavor.

  9. Serve and Enjoy: For a special touch, you can garnish with quail eggs (telur puyuh), although these are optional and serve more as a delightful addition if you have them on hand. Serve your Oseng Tongkol warm over steamed rice for a complete meal that captures the essence of Indonesian home cooking.

This Oseng Tongkol dish is not only simple and quick to prepare but also a celebration of vibrant flavors, making it a fantastic choice for a weeknight dinner or a gathering with friends and family. Enjoy the delightful combination of tender fish and fresh vegetables in this classic Indonesian stir-fry!
