Pepes Tahu Ikan Teri

Ingredients

Ingredient Quantity
Firm tofu (large) 1 piece
Anchovy fish (dried) ½ ounce
Basil leaves 2 bunches
Bird’s eye chili (whole) 10
Spice Paste:
Red chilies 4
Shallots 5
Garlic 3 cloves
Salt to taste
Flavor enhancer to taste
Banana leaves for wrapping
Toothpicks for securing
Cooking oil 2 tablespoons

Instructions

  1. Prepare the Mixture: In a mixing bowl, mash the tofu until smooth. Add the spice paste (red chilies, shallots, garlic), salt, flavor enhancer, and dried anchovies. Mix well until all ingredients are thoroughly combined.

  2. Wrap in Banana Leaves: Take a piece of banana leaf, place a generous spoonful of the tofu mixture in the center, add some basil leaves and a few whole bird’s eye chilies on top. Fold the banana leaf over the filling and secure it with toothpicks. Repeat this process until all the mixture is wrapped.

  3. Steam: Place the wrapped parcels in a steamer and cook for about 25 minutes. You can adjust the steaming time as necessary.

  4. Finish on the Pan: Once steamed, heat a non-stick skillet with a little oil. Carefully place the parcels in the pan and cook until the banana leaves are slightly dried and give a nice aroma.

  5. Serve: Remove from the pan, unwrap, and serve your Pepes Tahu Ikan Teri warm as a delightful side dish or main course, garnished with additional fresh basil if desired. Enjoy the rich flavors and fragrant aroma!
