Semur Tahu and Eggs
Ingredients:
- 1 package of tofu skin (tahu kulit)
- 4 hard-boiled eggs
- For the spice paste:
- 4 cloves garlic
- 4 shallots
- 1 candlenut (kemiri)
- 1 teaspoon coriander (ketumbar)
- For seasoning:
- 2 cups water
- 2 tablespoons sweet soy sauce (kecap manis)
- 1 teaspoon granulated sugar
- To taste, palm sugar (gula merah)
- 1 teaspoon salt
- 1/2 packet beef bouillon powder (Royco sapi)

Prepare the Spice Paste: Begin by grinding the garlic, shallots, candlenut, and coriander into a smooth paste. You can use a mortar and pestle or a food processor for this step.

Sauté the Spice Paste: Heat a little oil in a pan over medium heat. Add the spice paste and cook until fragrant and slightly golden.

Add Liquid: Pour in the water and stir to combine with the sautéed spice paste. Bring the mixture to a gentle boil.

Incorporate Tofu and Eggs: Once the mixture is boiling, add the tofu skin and the hard-boiled eggs. Stir to ensure the tofu and eggs are well-coated with the spices and liquid.

Season the Dish: Add the sweet soy sauce, granulated sugar, palm sugar (if using), salt, and beef bouillon powder. Mix thoroughly.

Simmer: Allow the semur to simmer for about 15 minutes, or until the tofu and eggs have absorbed the flavors. Be careful not to let the liquid reduce too much; you want some sauce left to enjoy with your dish.
