Pepes Tahu Kemangi

Ingredients

Tahu putih kotak ukuran sedang 15 pieces
Kemangi segar 2 sprigs
Telur utuh 2 pieces
Daun bawang, iris halus To taste
Bumbu Halus:
Cabai merah keriting 6 pieces
Cabai rawit merah 12 pieces
Bawang merah 8 cloves
Bawang putih 6 cloves
Jahe 1 piece (thumb-sized)
Kunyit bubuk ½ teaspoon
Royco ayam (optional) To taste
Garam To taste
Gula pasir To taste
Irisan lengkuas To taste
Daun salam To taste
Daun pisang untuk membungkus As needed

Instructions

  1. Prepare the Tofu: Begin by crushing the tofu using your hands or a spoon until it is well mashed. This will serve as the base for your pepes.

  2. Make the Spice Mix: In a blender, combine all the ingredients for the spice mix: red chilies, bird’s eye chilies, shallots, garlic, ginger, turmeric powder, and if desired, add the Royco chicken seasoning. Blend until smooth.

  3. Combine Ingredients: Mix the spice blend into the mashed tofu. Add salt, sugar, and adjust the taste as needed.

  4. Add Remaining Ingredients: Incorporate the eggs and kemangi into the tofu mixture, stirring well to ensure everything is evenly combined.

  5. Wrap in Banana Leaves: Lay out the banana leaves, adding a slice of galangal and a piece of bay leaf on top. Spoon the tofu mixture onto the leaves, fold them into packets, and secure with a toothpick.

  6. Steam: Place the wrapped packets in a steamer and cook for about 20 minutes.

  7. Serve: Once cooked, carefully unwrap and serve the Pepes Tahu Kemangi warm, enjoying the fragrant flavors of this delightful dish.
