Tahu Kuah Kuning: A Flavorful Indonesian Tofu Soup

Ingredients

Galangal 3 cm, smashed

Water 1 L
Spices Paste
Candlenuts 3
Ginger 1 cm
Pepper 1/2 tsp
Coriander 1/2 tsp
Shallots 3 cloves
Garlic 3 cloves
Turmeric 4 cm
Sugar 1 tsp
Salt 1/2 tsp

Instructions

  1. Prepare the Tofu: Begin by boiling the tofu in salted water until it reaches a rolling boil. Once boiled, cut the tofu into cubes and briefly fry them until golden.

  2. Make the Spice Paste: In a blender, combine the candlenuts, ginger, pepper, coriander, shallots, garlic, turmeric, sugar, and salt. Blend until you achieve a smooth paste.

  3. Sauté the Aromatics: In a large pot, heat oil over medium heat. Sauté the sliced shallots and garlic until fragrant. Then, add the spice paste and sauté for an additional few minutes, adding a splash of water if necessary.

  4. Combine Ingredients: To the pot, add the fried tofu cubes, smashed galangal, sliced bird’s eye chili, sliced tomato, leek, kaffir lime leaves, and bay leaves. Stir well to combine.

  5. Cook the Soup: Pour in the remaining water and bring the mixture to a boil. Allow it to simmer for a few minutes, tasting to adjust seasoning as needed.

  6. Serve: Once cooked through and fragrant, remove from heat. Ladle the soup into bowls and serve hot, garnished as desired.
