Italian Stir-Fry with Sprouts Recipe

Ingredients:

8 Pasta
1 Olive oil
1 Garlic clove
2 Slices of pancetta
1-2 Slices of bacon
7-8 Leek
3-5 Brussels sprouts
1/2 Cup of mushrooms
1/2 Cup of white wine
2 Tablespoons parmesan cheese
Pine nuts
Salt and pepper

Instructions:

  1. In a wok or large pan, heat the olive oil over medium-high heat. Add the minced garlic and stir-fry for a moment until fragrant.

  2. Add the sliced pancetta and bacon to the pan, stirring occasionally until they start to brown and crisp up.

  3. Toss in the chopped leeks and Brussels sprouts, continuing to fry for 2-3 minutes until they begin to soften and caramelize.

  4. Pour in the white wine, allowing it to come to a boil. Let it reduce for a minute or two to concentrate the flavors.

  5. Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.

  6. Once the wine has reduced, add the cooked pasta, mushrooms, cream, and grated parmesan cheese to the pan. Sprinkle in the pine nuts for added crunch.

  7. Stir everything together until well combined and heated through. Season with salt and pepper to taste.
