Instructions:

In a wok or large pan, heat the olive oil over medium-high heat. Add the minced garlic and stir-fry for a moment until fragrant.

Add the sliced pancetta and bacon to the pan, stirring occasionally until they start to brown and crisp up.

Toss in the chopped leeks and Brussels sprouts, continuing to fry for 2-3 minutes until they begin to soften and caramelize.

Pour in the white wine, allowing it to come to a boil. Let it reduce for a minute or two to concentrate the flavors.
