Ingredients:

  • 1 1/2 pounds sausage
  • 1 pound chicken
  • 2 – 2 1/2 bell peppers
  • 2 yellow onions
  • 1 garlic bulb
  • 1 cup chicken broth
  • 1 cup dry white wine
  • 1/2 cup sweet bell peppers
  • 1/2 cup vinegar
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon coarse salt
  • 1/2 teaspoon black pepper
  • 1/2 cup white wine vinegar
  • Water

Instructions:

Step Description
1 Prepare Vinegared Peppers: Wash and dry the peppers. Leave cherry peppers whole with stems attached. Core, quarter, and seed bell peppers, then cut into 1/2-inch thick strips. Peel onions and cut an “x” into both ends. Add peppers and onions to a 1-quart canning jar.
2 Pack Peppers: Fill a 1-quart canning jar with boiling water and let stand for 1 minute. Drain water and immediately pack peppers and onions in the jar, sprinkling with salt as you pack.
3 Add Vinegar: Pour white wine vinegar over peppers and add water, if needed, to cover them completely. Tightly seal the jar and shake well to mix. Place in a cool, dark place to marinate for at least two weeks before using.
4 Cook Chicken and Sausage: Heat oil in a large deep sautรฉ pan over medium-high heat. Saute sausage for about 8 minutes until lightly browned. Using a slotted spoon, remove and set aside.
5 Cook Chicken: Reheat oil and pat chicken dry. Saute chicken for about 15 minutes until cooked through.
6 Saute Vegetables: Stir in bell peppers, onion, and garlic. Saute for 5 minutes or until vegetables are soft and beginning to brown. Drain off excess oil and return sausage to the pan.
7 Deglaze Pan: Add wine and chicken broth to the pan, bring to a boil.
8 Add Flavor: Stir in Vinegared Peppers, vinegar, oregano, salt, and black pepper. Bring to a boil.
9 Simmer: Lower the heat and let it simmer for 10 minutes or until flavors have combined and sauce has reduced.
