Description:

This Italian Easter Pie recipe is a cherished family tradition passed down through four generations. 🌟 We’ve even immortalized the making of this special pie on video for the next in line. But be forewarned, this culinary adventure is time-consuming and a bit pricey, earning its nickname as a “heart attack-on-a-plate”. 💔 Yet, for those brave enough to undertake this gastronomic journey, the rewards are plenty! This pie, served best on Easter morning, is a complete meal in itself. Mom’s recommendation? Pair it with a light white wine to elevate its flavors, though a steaming cup of coffee does justice too. Good luck, and may your Easter be filled with culinary delights! 🐣☕

Ingredients:

  • 3 eggs
  • 3 cups all-purpose flour
  • 1/4 cup shortening
  • 2 cups milk
  • 1 teaspoon salt
  • 1 egg
  • 1 cup romano cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup Italian parsley
  • 3 sweet Italian sausage links
  • 1 cup ham
  • 1 cup mozzarella cheese
  • 1 cup provolone cheese

Instructions:

  1. Prepare the Dough:

    • Use a food processor for optimal results.
    • In the processor bowl, add flour, salt, milk, and shortening.
    • Pulse until the mixture resembles small peas.
    • Gradually add one egg at a time while continuing to mix until the dough forms a ball.
    • If the mixture is too dry, add water, a teaspoon at a time, until the dough holds together.
    • Remove the dough from the processor and lightly knead it by hand into two balls.
    • Chill the dough for 30 minutes.
  2. Roll Out the Dough:

    • On a floured board, roll out one ball of dough at a time until it is 1/8-inch thick and forms a circle to fit a 9-inch round glass baking dish.
    • Bring the dough up the sides of the dish, creating a crust.
  3. Prepare the Filling:

    • In the processor or blender, combine eggs, romano cheese, parsley, salt, and pepper. Set aside.
    • Begin layering the filling ingredients in the baking dish.
    • First, place quartered boiled eggs one inch apart on the bottom of the dough for the first layer.
    • For the second layer, add cheeses, hams, and sausage, alternating to distribute the filling evenly.
    • Ladle 1/4 cup of the blended egg mixture on top of the second layer.
    • Continue layering with hard-boiled eggs, meats, cheeses, etc., until all ingredients are used.
    • Top off with the remaining blended egg mixture.
  4. Cover and Bake:

    • Roll out the second ball of dough and cover the contents of the pie.
    • Cut a steam hole in the top and crimp the outer edges to seal tightly.
    • Preheat the oven to 350°F (175°C).
    • Bake for 1 hour or until the pie crust is golden brown and the contents are bubbly.
  5. Serve and Enjoy:

    • Cool the pie slightly before serving warm.
    • For leftovers, reheat in the microwave.
    • Each recipe yields two 9-inch pies, perfect for sharing with family and friends.
