Ingredients:
- 3 eggs
- 3 cups all-purpose flour
- 1/4 cup shortening
- 2 cups milk
- 1 teaspoon salt
- 1 egg
- 1 cup romano cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup Italian parsley
- 3 sweet Italian sausage links
- 1 cup ham
- 1 cup mozzarella cheese
- 1 cup provolone cheese
Instructions:
-
Prepare the Dough:
- Use a food processor for optimal results.
- In the processor bowl, add flour, salt, milk, and shortening.
- Pulse until the mixture resembles small peas.
- Gradually add one egg at a time while continuing to mix until the dough forms a ball.
- If the mixture is too dry, add water, a teaspoon at a time, until the dough holds together.
- Remove the dough from the processor and lightly knead it by hand into two balls.
- Chill the dough for 30 minutes.
-
Roll Out the Dough:
- On a floured board, roll out one ball of dough at a time until it is 1/8-inch thick and forms a circle to fit a 9-inch round glass baking dish.
- Bring the dough up the sides of the dish, creating a crust.
-
Prepare the Filling:
- In the processor or blender, combine eggs, romano cheese, parsley, salt, and pepper. Set aside.
- Begin layering the filling ingredients in the baking dish.
- First, place quartered boiled eggs one inch apart on the bottom of the dough for the first layer.
- For the second layer, add cheeses, hams, and sausage, alternating to distribute the filling evenly.
- Ladle 1/4 cup of the blended egg mixture on top of the second layer.
- Continue layering with hard-boiled eggs, meats, cheeses, etc., until all ingredients are used.
- Top off with the remaining blended egg mixture.
-
Cover and Bake:
- Roll out the second ball of dough and cover the contents of the pie.
- Cut a steam hole in the top and crimp the outer edges to seal tightly.
- Preheat the oven to 350°F (175°C).
- Bake for 1 hour or until the pie crust is golden brown and the contents are bubbly.
-
Serve and Enjoy:
- Cool the pie slightly before serving warm.
- For leftovers, reheat in the microwave.
- Each recipe yields two 9-inch pies, perfect for sharing with family and friends.
