Ingredients:

  • 8 sardines
  • 1/4 cup rice vinegar
  • 1/4 cup sake
  • 1/4 cup soy sauce
  • 3 slices gingerroot

Instructions:

  1. Prepare the Sardines:

    • Begin by tearing off the sardine heads by hand, removing the entrails, and thoroughly cleaning them in water.
    • Pat the cleaned sardines dry with paper towels and cut them into 2-3 pieces crosswise, ensuring they are evenly sized for cooking.

    • In a non-reactive saucepan, bring the sake and rice vinegar to a gentle boil, infusing the liquid with their aromatic essences.
  3. Simmer with Sardines:
