Description:
This delightful recipe, inspired by Japanese flavors, is a response to Troy’s craving for more sardine dishes. Originating from a beloved cookbook renowned for its foolproof recipes, these Soy Sauce and Vinegar Flavoured Sardines promise a burst of Asian-inspired taste in every bite. Perfect for a quick lunch or snack, this dish combines the richness of sardines with the tanginess of rice vinegar and the depth of soy sauce, creating a harmonious blend of flavors that will tantalize your taste buds.
Ingredients:
- 8 sardines
- 1/4 cup rice vinegar
- 1/4 cup sake
- 1/4 cup soy sauce
- 3 slices gingerroot
Instructions:
-
Prepare the Sardines:
- Begin by tearing off the sardine heads by hand, removing the entrails, and thoroughly cleaning them in water.
- Pat the cleaned sardines dry with paper towels and cut them into 2-3 pieces crosswise, ensuring they are evenly sized for cooking.
-
Prepare the Flavor Base:
- In a non-reactive saucepan, bring the sake and rice vinegar to a gentle boil, infusing the liquid with their aromatic essences.
-
Simmer with Sardines:
- Carefully arrange the prepared sardines in the saucepan, ensuring they are nestled snugly in the liquid.
- Add the slices of ginger to the pot, distributing them evenly among the sardines.
- Simmer the sardines very gently for 10 minutes, ensuring to cover the pot with a lid placed directly on the sardines. This technique, known as the “dropped lid technique,” allows the flavors to meld without disturbing the delicate fish.
-
Infuse with Soy Sauce:
- After 10 minutes of gentle simmering, add the soy sauce to the pot, allowing it to infuse the sardines with its rich umami flavor.
- Continue simmering the sardines until scarcely any liquid remains, ensuring that the fish are coated evenly in the flavorful sauce.
-
Serve:
- Once cooked, remove the pot from the heat and allow the sardines to cool to room temperature, allowing the flavors to further develop.
- Serve the Soy Sauce and Vinegar Flavoured Sardines as a delectable appetizer or main dish, garnished with additional ginger slices if desired.
