Cooking Time: 40 minutes

Total Time: 1 hour 10 minutes

Serves: 4-6

Instructions:

Step 1: Prepare the Gulab Jamuns

  1. Begin by preparing the savory gulab jamuns, which will form the heart of this unique sabzi.
  2. In a large bowl, crumble the khoya and paneer together to create a smooth mixture. Ensure that both ingredients are well combined for a dough-like consistency.
  3. Add the all-purpose flour (maida) to the mixture, followed by ghee and rose water. Mix thoroughly until the dough comes together.
  4. Roll the mixture into small round balls resembling traditional gulab jamuns, ensuring they are smooth and even in size.
  5. Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully drop the prepared gulab jamun balls into the oil, frying them in batches. Fry until they are golden brown and crispy on the outside. Remove the fried gulab jamuns and set them aside on a paper towel to drain excess oil.

Step 2: Make the Gravy

  1. In a large, deep pan, heat 2 teaspoons of ghee over medium heat. Once melted, add the ground onion paste and sauté it until it turns golden brown and aromatic.
  2. Add the finely chopped ginger to the pan and cook for a minute until it releases its fragrance.
  3. Stir in the cumin powder, red chilli powder, turmeric powder, and garam masala powder, mixing well to incorporate all the spices into the onion mixture.
  4. Next, add the homemade tomato puree, stirring to blend the flavors. Let this mixture cook for about 5-7 minutes until the oil starts to separate from the gravy, indicating the spices are well-cooked.
  5. Pour in the warm water, stirring continuously to form a smooth, well-combined gravy. Bring the gravy to a gentle simmer, adjusting the consistency with additional water if necessary.
  6. Add the chopped green chili and cumin powder, allowing them to infuse their flavors into the gravy.
  7. Add salt to taste and let the gravy simmer for another 10 minutes, allowing the flavors to develop fully.

Step 3: Combine the Gulab Jamuns with the Gravy

  1. Gently drop the prepared savory gulab jamuns into the simmering gravy. Make sure the gulab jamuns are fully submerged in the gravy to absorb the rich flavors.
  2. Cover the pan and let the gulab jamuns simmer in the gravy for about 10-15 minutes, allowing them to soak up the spices and moisture from the gravy.
  3. Just before serving, garnish with fresh coriander leaves to add a touch of color and freshness to the dish.

Step 4: Serve and Enjoy

  1. Serve the Jodhpuri Style Gulab Jamun Ki Sabzi hot with steamed rice, roti, or paratha. The soft, savory gulab jamuns paired with the rich, spicy gravy make this a satisfying and hearty dish perfect for special occasions or a flavorful weeknight meal.

Tips:

  • You can prepare the gulab jamuns ahead of time and store them in the refrigerator, then make the gravy fresh when ready to serve.
  • Adjust the spice level according to your preference by increasing or decreasing the amount of red chili powder and green chilies.
  • For an extra touch of flavor, you can add a dash of garam masala just before serving.
