Ingredients:

Main Ingredients:
- 500 grams beef fat (I used a mix of beef tendon and fat)
- 2 stalks lemongrass, smashed
- 1 piece of cinnamon stick
- 1 piece of galangal, smashed
- 3 sachets of Diabetasol (a sugar substitute)
- 1/2 teaspoon Himalayan salt
- 3 tablespoons apple cider vinegar

Spice Blend:
- 15 shallots
- 5 garlic cloves
- A handful of curly red chilies
- Red bird’s eye chilies, to taste (optional, for added heat)
Instructions:

Prepare the Beef Fat:
- Place the beef fat (and tendon) in a large pot and cover with water. Bring to a boil, then reduce to a simmer. After some time, discard the water and replace it with fresh water. Continue simmering until the beef fat becomes tender.
- If the beef fat still has a strong beefy odor, change the water again and simmer until the aroma is less pronounced.

Cook the Spice Blend:
- While the beef fat is simmering, prepare the spice blend. Blend the shallots, garlic, and curly red chilies until smooth. Adjust the amount of red bird’s eye chilies according to your preference for spiciness.
- In a separate pan, heat a little oil and sauté the blended spices, galangal, and lemongrass until fragrant.

Combine and Simmer:
- Once the beef fat is tender, drain and discard the cooking water. Add the beef fat to the pan with the sautéed spices.
- Season with Himalayan salt, Diabetasol, and apple cider vinegar. Stir well to combine and allow the flavors to meld together. Cook for a few more minutes until the spices are fully absorbed and the dish is well-seasoned.
