Korean Rolled Omelette (Gyeran Mari)
Ingredients:

Red chili peppers (sliced) | 5 pieces |

Instructions:

- In a mixing bowl, whisk the eggs until well combined, similar to preparing a regular omelette. Season with salt, pepper, and soy sauce.
- Add the sliced red chili peppers and chopped green onions to the egg mixture, stirring gently to combine all ingredients.
- Heat a non-stick frying pan over medium heat and pour in a ladleful of the egg mixture. Spread it evenly to form a thin layer.
- Once the surface of the omelette starts to set but is still slightly wet, carefully roll it up from one side to the other.
- Push the rolled omelette to the side of the pan, leaving some space for the next layer. Pour in another ladleful of the egg mixture, allowing it to spread and cook slightly before rolling the previous omelette into it.
- Repeat this process until all the egg mixture is used, lowering the heat as necessary to ensure even cooking.
- Once fully cooked, remove from heat and let it cool slightly. Slice into bite-sized pieces and serve warm or at room temperature.
