Instructions
- Preheat the Oven: Start by preheating your oven to 175°C (350°F).
- Prepare the Lamb: Coat the lamb generously with seasoned flour. For ease, place the lamb in a plastic bag with the flour and shake until well coated.
- Sear the Lamb: In a large frypan, melt the olive oil and butter together over medium heat. Add the floured lamb and fry until browned on all sides, then remove it from the pan and set aside.
- Cook Onions and Bacon: In the same frypan, add the sliced onions and diced bacon. Fry until both are beautifully browned and aromatic, then remove from the pan and set aside.
- Combine the Juices: Pour the stock, pineapple juice, and canned tomatoes into the same pan, stirring well to combine all the flavorful juices left in the pan.
- Layer the Casserole: In a large casserole dish, place half of the browned lamb at the bottom. Top with half of the bacon and onion mixture, followed by half of the pineapple chunks. Repeat this layering process to use up the remaining ingredients.
- Add the Sauce: Pour the stock, pineapple juice, and tomato mixture evenly over the layers in the casserole dish.
- Bake: Cover the dish with a lid and place it in the preheated oven. Bake for 1 hour.
- Finish Baking: After an hour, remove the lid and continue baking for an additional 20 minutes, allowing the liquid to reduce slightly and the top to achieve a lovely glazed appearance.
- Serve: This dish pairs wonderfully with a fluffy rice pilaf, enhancing its flavors beautifully.
Enjoy your delicious Lamb, Bacon & Pineapple Casserole, a heartwarming dish sure to please the entire family!
