Instructions:

  1. Cook Bacon:
    In a large skillet over medium-high heat, cook the diced bacon until crispy. Once cooked, transfer the bacon to a plate and set aside, keeping the rendered fat in the skillet.

  2. Prepare Lamb:
    In a large mixing bowl, combine the flour with 1-1/2 teaspoons of salt and 1 teaspoon of black pepper. Add the lamb cubes to the flour mixture, tossing them until evenly coated.

  3. Brown Lamb:
    Reheat the reserved bacon fat in the skillet. Brown the flour-coated lamb cubes in the bacon fat until they develop a golden crust. If needed, add a little oil to the skillet.

    Transfer the browned lamb to a large pot, leaving about 1/4 cup of fat in the skillet. Add the chopped onion to the skillet and sauté until it begins to caramelize, about 5 minutes. Then, add the minced garlic and dried thyme, cooking for an additional 2 minutes.

  5. Deglaze Skillet:
    Pour 1/4 cup of water into the skillet to deglaze, scraping up any browned bits from the bottom. Transfer the onion and garlic mixture to the pot with the browned lamb.

  6. Simmer Stew:
    To the pot, add the reserved bacon pieces, beef stock, bay leaves, and beer or wine. Cover and simmer over low heat for 1-1/2 hours, or until the lamb is tender and the flavors meld together.

  7. Add Vegetables:
    After the initial simmering time, add the remaining chopped onions, sliced carrots, and cubed potatoes to the stew. Cover and continue to simmer for an additional 20 minutes, or until the vegetables are tender and infused with the flavors of the stew.
