Description

This Leek Pie is a delightful luncheon or light dinner option, perfect for those looking for a comforting yet easy-to-make meal. The pie crust made from bread adds a unique twist, providing both flavor and convenience. Originally inspired by a recipe from the Australian Women’s Weekly, this dish has stood the test of time and remains a favorite among many. Pair it with a tossed green salad and some crispy chips (fries) on the side for a complete meal experience.

Ingredients

  • 8 slices of bread (crusts removed)
  • Margarine
  • 3/4 cup chopped red capsicum (bell pepper)
  • 1 leek, finely sliced
  • 1 clove of garlic, minced
  • 3 tablespoons cornflour
  • 1 cup milk
  • 1 egg
  • Grated cheese
  • 1 vegetable stock cube

Instructions

  1. Prepare the Pie Crust:

    • Remove the crusts from the bread slices and spread them evenly with margarine.
    • Reserve the crusts for later use.
    • Line the base and sides of a deep pie plate with the buttered bread slices, placing the buttered side down.
    • Sprinkle grated cheese over the bread slices and press down gently. Set aside.
  2. Prepare the Filling:

    • In a saucepan, melt a knob of margarine over medium heat.
    • Add the finely sliced leeks and cook for about 5 minutes until they are softened and fragrant.
    • Stir in the chopped red capsicum and minced garlic, cooking for an additional 1 minute.
  3. Make the Sauce:

    • Blend the cornflour with the milk until smooth, ensuring there are no lumps.
    • Crumble the vegetable stock cube into the mixture and stir until well combined.
    • Pour the milk mixture into the saucepan with the leeks and capsicum.
    • Cook the mixture for about 3 minutes, stirring continuously, until it thickens slightly.
  4. Combine and Bake:

    • Remove the saucepan from the heat and beat the egg into the mixture until fully incorporated.
    • Pour the filling into the prepared bread-lined pie plate.
    • Use the reserved bread crusts to decorate the top of the pie in a lattice pattern, creating a visually appealing design.
  5. Bake:

    • Preheat your oven to 200 degrees Celsius (approximately 390 degrees Fahrenheit).
    • Place the assembled pie in the preheated oven and bake for about 30 minutes, or until the filling is set and the crust is golden brown.
  6. Serve:

    • Once baked, remove the Leek Pie from the oven and allow it to cool slightly before slicing.
    • Serve warm alongside a fresh tossed green salad and some crispy chips (fries) for a delightful meal that’s sure to please.
