Lentil Soup with Sausage 🥣

Description: This hearty lentil soup is the perfect remedy for chasing away the chill of a cold day! Ingredients:

1 Onion
4 stalks Celery
8 oz Kielbasa sausage
4 cups Chicken broth
4 cups Water
2 cups Dry green lentils
1 Orange
1/4 tsp Dried marjoram
1 tsp Dried savory
3 Carrots
3 Potatoes
To taste Salt and pepper

Instructions:

  1. Heat Oil: In a large heavy saucepan, heat the olive oil over medium heat.

  2. Sauté Onion: Add the onion to the saucepan and cook for about 5 minutes, stirring occasionally, until translucent and fragrant.

  3. Add Celery and Sausage: Stir in the celery and sliced kielbasa sausage (you can use kielbasa instead of salami if available) and cook for an additional 5 minutes, continuing to stir occasionally.

  4. Combine Ingredients: Pour in the chicken broth, water, dry green lentils, and add the piece of orange (make sure to remove any seeds). Add the dried marjoram, dried savory, and season with salt and pepper to taste. Bring the mixture to a boil.

  5. Simmer: Once boiling, reduce the heat to low, cover the pot partially, and allow the soup to simmer for 30 minutes.

  6. Add Vegetables: After 30 minutes, add in the sliced carrots and diced potatoes. Cover the pot partially again and continue to simmer, stirring occasionally, for an additional 35 minutes or until the lentils and vegetables are tender.

  7. Remove Orange: Discard the piece of orange from the soup.

  8. Season to Taste: Taste the soup and adjust the seasoning if necessary by adding more salt and pepper according to your preference.

  9. Serve: Ladle the hot lentil soup into bowls and serve immediately. Optionally, garnish with fresh herbs like parsley or a drizzle of olive oil.
