Pentol Ikan Tenggiri Recipe

Ingredients:

  • 700 grams mackerel fish (ikan tenggiri)
  • 2 tablespoons tapioca flour (tepung tapioka) or cornstarch
  • 3 tablespoons all-purpose flour (terigu)
  • 1 packet seasoning mix (masako)
  • 1/2 teaspoon black pepper (merica)
  • 1 egg
  • 7 cloves garlic (bawang putih)
  • Ice-cold water (air es) for mixing

Instructions:

  1. Prepare the Fish:

    • Clean the mackerel fish thoroughly. Using a blender, finely grind the fish flesh. Add the garlic cloves to the blender and continue blending until well combined.
  2. Mix the Ingredients:

    • In a large mixing bowl, combine the ground fish and garlic mixture with the seasoning mix, black pepper, egg, tapioca flour, and all-purpose flour. Gradually add ice-cold water to the mixture. Be cautious with the amount of water; add it gradually until the mixture reaches a thick, pliable consistency. The dough should be moist but firm enough to hold its shape when formed into balls.
  3. Shape the Pentol:

    • Bring a large pot of water to a boil. With clean hands or using a spoon, form small balls of the fish mixture and drop them gently into the boiling water. Ensure the water is at a rolling boil to cook the pentol evenly. Continue forming and adding the pentol until all of the mixture has been used.
  4. Cook the Pentol:

    • Boil the pentol until they float to the surface and are cooked through, about 5-7 minutes. Remove them with a slotted spoon and let them drain on a paper towel-lined plate.
  5. Prepare the Sambal (Chili Sauce):

    • For the sambal, grind red chili peppers (cabe rawit) and shallots (bawang merah) together using a mortar and pestle or a blender until smooth. Heat a little oil in a pan over medium heat, add the ground chili mixture, and sauté until fragrant. Season with additional seasoning as needed.
  6. Serve:

    • Serve the pentol ikan tenggiri hot with the sambal on the side. Enjoy as a delicious snack or as part of a main meal!
