  1. Prepare the Sauce:

    • Heat olive oil in a large saucepan over medium-high heat.

    • Stir in minced garlic and sautΓ© for an additional minute.
    • Incorporate sliced mushrooms and sautΓ© for 2 minutes.
    • Add diced tomatoes, tomato sauce, dried oregano, basil, parsley, kosher salt, and fresh ground pepper. Stir well.
    • Partially cover the pan and simmer on low heat.
  2. Prepare the Meat Mixture:

    • In a separate frying pan, over medium-high heat, combine crumbled ground beef, Worcestershire sauce, kosher salt, and fresh ground pepper.
    • Cook until the beef is browned, then drain any excess fat.
    • Add the browned beef to the simmering sauce.
    • Continue to simmer until the sauce thickens, approximately 15 to 20 minutes.

    • In a large mixing bowl, combine ricotta cheese, mozzarella cheese, half of the grated Parmesan cheese, chopped parsley, kosher salt, and fresh ground pepper.
    • Spoon or pipe the cheese mixture into the cooled manicotti tubes.
    • Spread about half a cup of the prepared sauce on the bottom of a 13x9x2 inch baking dish.
    • Arrange the filled manicotti tubes in a single layer over the sauce.
    • Cover the manicotti with the remaining sauce.
    • Bake covered with foil for 20 minutes, then uncover, sprinkle the remaining Parmesan cheese over the top, re-cover, and continue baking for an additional 15 minutes, or until the dish is hot and bubbly.
  5. Serve and Enjoy:

    • Once baked, garnish the dish with fresh parsley for a vibrant finish.
    • Serve hot and savor the delightful flavors of Mike’s Stuffed Manicotti with Meat Sauce.
