Ingredients:

  • 1 large tomato, roughly chopped
  • 2 large onions, roughly chopped
  • 3 garlic cloves
  • 1 bouquet garni
  • Fresh basil leaves
  • 1/4 cup olive oil
  • 2 onions, peeled
  • 2/3 cup golden raisins
  • 1 cup white wine vinegar
  • 1 tablespoon sugar (adjust to taste)

Instructions:

  1. Prepare Sauce:

    • Roughly chop and mix the tomato, onions, garlic cloves, bouquet garni, basil leaves, and olive oil.
    • Cook the mixture in a saucepan for 30-45 minutes until soft.
    • For a chunky texture, use a blender instead of a sieve but avoid liquefying the sauce.
  2. Cook Onions:

    • Peel the onions and place them in a stockpot.
    • Add the prepared sauce along with golden raisins, white wine vinegar, and a teaspoonful of sugar.
    • Add just enough water to cover the onions.
  3. Simmer:

    • Stir the mixture and bring it to a boil.
    • Reduce the heat to simmer and taste the sauce.
    • Gradually add sugar to balance the acidity of the tomatoes and vinegar. The dish should have a slightly sharp taste but not unpleasantly sour.
