Description

Ingredients

  • 1 cup red wine
  • 1 lb ground turkey
  • 3/4 cup onion, finely chopped
  • 1 package Stove Top stuffing mix
  • 2 eggs
  • 1 cup barbecue sauce, divided
  • 1 red bell pepper, diced
  • 1 cup cheese, shredded
  • Mashed potatoes (to top)
  • Almonds (to sprinkle on top)

Instructions

Step Instructions
1 Preheat oven to 375°F.
2 Thaw pie crust and perforate with a fork, following package directions.
3 In a large bowl, mix together ground turkey, finely chopped onion, Stove Top stuffing mix, eggs, diced red bell pepper, and half of the barbecue sauce. Combine well.
4 Pour the mixture into the prepared pie crust, spreading it evenly. Ensure to cover the exposed top rim of the pie crust to prevent burning.
5 Spread the remaining half of the barbecue sauce over the top of the meatloaf mixture.
6 Bake in the preheated oven for 45 minutes, or until the meatloaf is cooked through.
7 Remove from the oven and spread mashed potatoes in a thick layer over the top of the meatloaf pie.
8 Sprinkle almonds over the mashed potatoes, then add shredded cheese on top.
9 Return the pie to the oven and bake for an additional 10 to 15 minutes, until the cheese is melted and bubbly.
