Instructions:

Step Details Time
1 Preheat oven to 200°F (95°C).
2 Place beef roasts in a large roasting pan or Dutch Oven. Do not add salt or water.
3 Cover with a tight lid and roast for about 12 hours until well done, or cook roasts with 1 cup of water in a pressure cooker for 35 to 40 minutes. Crockpots work as well. 12 hours
4 Drain meat, reserving the juices.
5 Cool meat, then remove bones and fat, and set aside.
6 Melt shortening in a large skillet over medium heat.
7 Add chopped onions and diced green chilies. Saute for about 1 minute. 1 minute
8 Stir in green chili salsa, garlic powder, flour, salt, and ground cumin. Cook for another minute over medium-low heat. 1 minute
9 Stir in reserved meat juices and shredded meat.
10 Cook for 5 minutes until the mixture thickens. 5 minutes
11 Cool the mixture.
12 Divide the mix into three 1-quart freezer containers, leaving 1/2 inch space at the top.
13 Seal and label the containers.
14 Freeze and use within 6 months.
