Ingredients

Ingredient Quantity
Tortillas 4
Eggs 4
Precooked black beans 200g
Cherry tomatoes 200g
Red spring onions 100g
Cheddar cheese 80g
Feta cheese 20g
Fresh chili pepper 1
Extra virgin olive oil 2 tablespoons
Avocados 2
Lime 1
Salt 1 teaspoon
Black pepper 1 teaspoon

Instructions

To begin preparing your Mexican Breakfast, start by draining and rinsing the black beans, setting them aside. Next, wash and halve the cherry tomatoes. Chop the fresh chili pepper, removing both the stem and seeds to keep the flavor fresh and mild.

For the red spring onions, peel them and slice them into thick rings. To retain their crunch and reduce their pungency, place the sliced onions in a bowl of ice-cold water for a few minutes before using them.

Now, for the star of the dish, the Guacamole: Start by cutting the avocados in half, removing the pit. Then, make vertical and horizontal cuts into the flesh of the avocado, but be careful not to puncture the skin. Once scored, use a spoon to scoop the cubed avocado into a bowl. Grate the zest of the lime and add it to the avocado, then squeeze the juice of the lime into the mix. Season with salt, pepper, and a drizzle of olive oil. Mash everything together with a fork to achieve the desired texture.

For the eggs, heat a bit of olive oil in a skillet and cook them sunny-side up. Wait for the egg whites to set, keeping the yolk runny, then transfer the eggs to a plate.

In the same pan, quickly warm the tortillas one at a time. Flip them over and sprinkle shredded cheddar cheese on the hot side of the tortilla, allowing it to melt completely. Once the cheese has melted, remove the tortilla from the pan and place it on a plate.

Now it’s time to assemble your Mexican Breakfast: On each tortilla, spoon some chopped tomatoes, followed by the black beans. Add a touch of chili and the crisp red onions. Crumble some feta cheese over the top for a creamy contrast. Season with salt and pepper to taste, and your vibrant Mexican breakfast is ready to serve!

Enjoy this delicious and hearty breakfast full of flavors that will fuel you for the day ahead!
