Prepare the Apples: Start by washing the Fuji apple thoroughly. Cut it in half and remove the core. Slice two quarters of the apple into thin sticks. The remaining two quarters should be sliced into very thin slices (you will need 12 slices).

Prepare the Cheese Mixture: Cut the provola cheese into thin slices and then into small cubes. Place it in a bowl and add the whole egg, the egg yolk, and the heavy cream. Season with a pinch of salt, freshly ground black pepper, and a sprinkle of nutmeg. Mix everything together until well combined.

Shape the Pies: Roll out the first sheet of puff pastry and use a 10 cm round cutter to cut out 4 discs. Butter 4 tartlet pans (each about 8 cm in diameter), and line them with the puff pastry discs, making sure to press the pastry firmly into the base and along the sides.

Assemble the Pies: Spoon a tablespoon of the cheese and egg mixture into each tartlet pan. Top with about half a tablespoon of the apple sticks. Finish by placing 3 thin apple slices on top of each tartlet to create a decorative layer.

Top with Puff Pastry: Roll out the second sheet of puff pastry and use the same 10 cm cutter to make 4 more discs. Using a small knife, carefully make 3 slits in the center of each disc, being sure not to cut all the way to the edges. Place each slitted pastry disc over the filled tartlet, gently pressing down on the edges to seal.

Egg Wash: Beat the egg yolk with a little whole milk in a small bowl. Brush the tops of the pies with this egg wash to give them a golden, glossy finish.

Bake: Preheat your oven to 180°C (350°F) in static mode. Place the mini pies in the oven and bake for 20-25 minutes, or until they are golden brown and crispy.
