Instructions
-
Prepare the Dough:
In a mixing bowl, combine the all-purpose flour, whole wheat flour, rice flour, ghee, and salt. Mix well to ensure an even distribution of ingredients. Gradually add the required amount of water to form a smooth and soft dough. Knead thoroughly until the dough is elastic. Once ready, apply a teaspoon of oil over the dough, smooth it out, and place it in a bowl. Cover and set aside to rest. -
Make the All Spice Mix:
Heat a small skillet over medium-low heat. Add the green cardamom, cloves, black peppercorns, dry red chillies, cinnamon stick, black cardamom, mace, and ajwain. Roast the spices gently, stirring occasionally, until they release their fragrant aroma. Turn off the heat and allow the spices to cool. Transfer them to a mixer jar and grind into a fine powder. Set aside. -
Prepare the Keema Filling:
In a kadai (wok) over medium heat, heat some sunflower oil. Once hot, add the minced ginger, garlic, and green chillies. Sauté for about a minute until fragrant. Add the finely chopped onion and continue to sauté until they turn a deep golden brown. Incorporate the minced mutton and whisked curd, mixing well to combine. Lower the heat and season with salt, coriander powder, turmeric powder, and 1 teaspoon of the all-spice mix. Stir thoroughly, cover, and let the keema cook until tender, ensuring it remains moist yet not watery. Once done, stir in the chopped mint and coriander leaves, mixing well before turning off the flame. -
Assemble the Parathas:
In a separate bowl, beat the eggs and set aside. Heat a non-stick tawa (griddle) over medium heat. Pinch off a large portion of the dough and roll it into a ball. Dust with flour and roll out into a roti approximately 7 inches in diameter. Place the rolled roti onto the hot tawa. Immediately spread 2 to 3 tablespoons of beaten egg evenly over the surface. Spoon two tablespoons of the prepared keema filling into the center of the roti. -
Seal and Fry:
Carefully fold the edges of the roti towards the center, creating a square shape around the filling. Drizzle oil around the edges and shallow fry the paratha, cooking until it turns golden brown and crispy on all sides. Once cooked, transfer the paratha to a serving plate. -
Serve:
Cut the Mughlai Keema Paratha into smaller squares or wedges and serve hot with a side of Dhaniya Pudina Chutney and pickled onions for a delightful meal that embodies the essence of Mughlai flavors.
Indulge in the richness of Mughlai Keema Paratha, a dish that brings together aromatic spices and tender meat in a delightful bread, perfect for impressing your guests or enjoying a flavorful meal at home. Enjoy!
