Tortilla Roll-Ups with Mushroom and Egg

Ingredients

Quantity Ingredient
4 Tortillas
3 tablespoons Tomato sauce
4 tablespoons Mayonnaise
1 Lettuce leaf (substituted with cucumber)
Filling:
2 tablespoons Unsalted butter
1 Onion, coarsely chopped
4 Champignon mushrooms, coarsely chopped (substituted with wood ear mushrooms)
100 grams Sliced meat (additional)
4 Eggs, beaten
25 grams Grated Cheddar cheese
1 teaspoon Parsley (optional)
To taste Salt and pepper

Instructions

  1. In a skillet, melt the unsalted butter over medium heat. Add the coarsely chopped onion, sliced meat, and mushrooms. Sauté until fragrant and the onion is translucent.

  2. Pour in the beaten eggs, followed by the grated Cheddar cheese, parsley (if using), salt, and pepper. Stir quickly to combine and cook until the eggs are set, allowing them to form a soft scramble. Remove from heat and set aside.

  3. Take one tortilla and spread a layer of tomato sauce and mayonnaise over its surface. Lay down three leaves of lettuce (or cucumber) along one side of the tortilla.

  4. Spoon the egg and mushroom filling onto the same side of the tortilla where you placed the lettuce. Carefully roll the tortilla from that side, tucking in the filling as you go.

  5. Slice the rolled tortilla into bite-sized pieces and serve immediately as a delightful snack or appetizer.
