In a skillet, melt the unsalted butter over medium heat. Add the coarsely chopped onion, sliced meat, and mushrooms. Sauté until fragrant and the onion is translucent.

Pour in the beaten eggs, followed by the grated Cheddar cheese, parsley (if using), salt, and pepper. Stir quickly to combine and cook until the eggs are set, allowing them to form a soft scramble. Remove from heat and set aside.

Take one tortilla and spread a layer of tomato sauce and mayonnaise over its surface. Lay down three leaves of lettuce (or cucumber) along one side of the tortilla.
