Instructions

  1. Prepare the Greens:

    • In a large nonstick frypan, heat olive oil over medium heat.
    • Add mushrooms and sauté until browned on both sides, about 5-6 minutes.
  2. Cook the Bok Choy and Spinach:

    • Wash and clean both the bok choy and baby bok choy.
    • Cut about an inch off the root end of the bok choy and separate the leaves.
    • Add bok choy, baby bok choy, and red pepper to the mushrooms in the pan. Season with salt, pepper, and Splenda sugar substitute.
  3. Simmer with Broth:

    • Sauté for 2 minutes, then add beef broth. Cover and cook for another 2 minutes or until the bok choy is tender.
    • Uncover, add sesame oil, and stir to combine.
  4. Thicken the Sauce:

    • In a small bowl, whisk cornstarch into water until dissolved. Add the mixture to the greens in the pan, stirring gently.
    • Bring the mixture to a boil, then reduce heat and simmer for 1 minute or until the liquid has thickened to your desired consistency.
  5. Serve Hot:

    • Transfer the savory greens to serving plates.
    • If desired, sprinkle roasted sesame seeds over the dish just before serving for added flavor and texture.
