Ingredients:

Quantity Ingredient
24 Butter
2 Shallots
4 Mushrooms
3 Flour
1/2 Salt
2 Parsley
1 Chives
1/2 Lemon juice
1 Parmesan cheese

Instructions:

Croustades:

  1. Preheat your oven to 400°F (200°C).
  2. Using a pastry brush, generously coat the inside of two miniature muffin pans (24 total muffins) with the melted butter.
  3. With a plain or fluted 2 1/2″ cutter, cut rounds from the 24 slices of bread.
  4. Carefully fit the bread rounds into the muffin tins, gently pushing the center of the bread into the well and molding them around the bottom of the tin.
  5. Create petal shapes by pushing the tops of the bread rounds.
  6. Bake the croustades for 10-12 minutes or until they brown slightly on the rims.
  7. Remove the croustades from the tins and let them cool.

Duxelles:

  1. In a heavy 10-inch skillet, slowly melt the butter over moderate heat.
  2. Add the shallots and cook for about 4 minutes until softened.
  3. Add the mushrooms, stirring thoroughly to coat them with butter.
  4. Cook the mushrooms until they release their moisture and it evaporates, about 10-15 minutes.
  5. Sprinkle the flour over the mushrooms and stir until fully incorporated.
  6. Pour in the cream, stirring constantly, and bring to a boil.
  7. Simmer for 5 minutes, then remove from heat.
  8. Add salt, parsley, chives, and lemon juice to the mushroom mixture, stirring well.
  9. Allow the filling to cool slightly.

Assembly:

  1. Use a small spoon or a decorating bag to fill the croustades with the duxelles mixture, mounding it slightly.
  2. Sprinkle each croustade with a little Parmesan cheese.
  3. Before serving, heat the croustades at 350°F (175°C) for about 10 minutes to warm them through.
