Instructions:
-
Rehydrate the Dried Mushrooms:
- In a small bowl, place the dried porcini mushrooms and cover them with warm water.
- Allow them to soak for about 10 minutes until softened.
-
Prepare the Wild Rice:
- After soaking, drain and rinse the mushrooms, squeezing out any excess water.
- Finely chop the mushrooms and set them aside.
- In a saucepan, combine the wild rice with enough water to cover it well.
- Bring to a boil, then reduce the heat to simmer, uncovered, for about 45-50 minutes, or until the rice is tender and the grains have opened.
- Add more water as needed to keep the rice covered.
- Once cooked, drain any excess water and keep the wild rice warm.
-
Saute the Vegetables:
- In a large deep nonstick skillet or saucepan, melt the butter over medium heat.
- Add the chopped onion, fresh rosemary, rehydrated mushrooms, and sliced carrot to the skillet.
- Cook, stirring occasionally, for about 6 minutes, or until the vegetables are crisp-tender and fragrant.
-
Cook the White Rice:
- To the skillet, add the white rice, chicken broth, and season with pepper to taste.
- Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 20 minutes, or until the white rice is tender.
- If there is any excess liquid, drain it from the skillet.
-
Combine and Serve:
- In a large mixing bowl, combine the cooked wild rice, white rice, and freshly chopped parsley.
- Mix well to incorporate all the flavors.
- Serve the Herbed Mushroom Wild Rice hot, garnished with additional parsley if desired.
