Instructions:

  1. Rehydrate the Dried Mushrooms:

    • In a small bowl, place the dried porcini mushrooms and cover them with warm water.
    • Allow them to soak for about 10 minutes until softened.
  2. Prepare the Wild Rice:

    • After soaking, drain and rinse the mushrooms, squeezing out any excess water.
    • Finely chop the mushrooms and set them aside.
    • In a saucepan, combine the wild rice with enough water to cover it well.
    • Bring to a boil, then reduce the heat to simmer, uncovered, for about 45-50 minutes, or until the rice is tender and the grains have opened.
    • Add more water as needed to keep the rice covered.
    • Once cooked, drain any excess water and keep the wild rice warm.
  3. Saute the Vegetables:

    • In a large deep nonstick skillet or saucepan, melt the butter over medium heat.
    • Add the chopped onion, fresh rosemary, rehydrated mushrooms, and sliced carrot to the skillet.
    • Cook, stirring occasionally, for about 6 minutes, or until the vegetables are crisp-tender and fragrant.
  4. Cook the White Rice:

    • To the skillet, add the white rice, chicken broth, and season with pepper to taste.
    • Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 20 minutes, or until the white rice is tender.
    • If there is any excess liquid, drain it from the skillet.
  5. Combine and Serve:

    • In a large mixing bowl, combine the cooked wild rice, white rice, and freshly chopped parsley.
    • Mix well to incorporate all the flavors.
