- 1/2 cup butter
- 1 onion, diced
- 1 cup fresh mushrooms, sliced
- 1/2 green pepper, diced
- 1 cup long grain rice
- 1 teaspoon thyme
- 2 cups chicken broth
- 1 cup beef broth

Instructions:
- Preheat oven to 350ยฐF (175ยฐC).
- In a skillet, melt 1/4 cup of butter over medium heat.
- Add diced onion, green pepper, and sliced mushrooms to the skillet. Sautรฉ until tender. Set aside.
- In the same skillet, heat the remaining butter.
- Add long grain rice to the skillet and brown slightly.
- Pour in chicken broth and beef broth, and add thyme. Allow the mixture to heat through.
- Transfer all the ingredients from the skillet into a 1 1/2 quart casserole dish.
- Cover the casserole dish and bake in the preheated oven for 40 minutes, or until the liquid is absorbed and the rice is tender.
- Once done, remove from the oven and let it rest for a few minutes.
- Fluff the rice pilaf with a fork before serving.
