Nettle Frittata Recipe

Category: Main Dish
Serves: 4
Preparation Time: 20 minutes
Cooking Time: 15 minutes

A wholesome and flavorful dish, this Nettle Frittata combines the richness of eggs, Parmigiano Reggiano, and the unique taste of nettles for a light and delicious meal. Perfect for breakfast, brunch, or a simple dinner, this recipe highlights the earthy flavors of the nettles, creating a beautiful frittata that’s satisfying and nutritious.

Ingredients:

Ingredient Quantity
Fresh Nettles (stems removed) 400g
Eggs 5
Butter 40g
Parmigiano Reggiano DOP (grated) 40g
Salt To taste
Black Pepper To taste

Instructions:

  1. Prepare the Nettles:
Begin by wearing rubber gloves to protect your hands from any remaining stinging compounds on the nettle stems and leaves. Carefully remove the nettles from the stems, keeping only the leaves.

  2. Clean the Nettles:
Soak the nettle leaves in cold water to clean them thoroughly. Once they are properly rinsed, set them aside.

  3. Cook the Nettles:
Bring a pot of salted water to a boil. Add the nettles and cook them for about 10 minutes, or until the leaves become soft and their color darkens. After cooking, drain the nettles in a colander.

  4. Remove Excess Water:
Use the back of a fork to press the cooked nettles against the colander, ensuring that as much water as possible is removed from the leaves.

  5. Prepare the Egg Mixture:
Crack the eggs into a mixing bowl. Add a pinch of salt and black pepper to taste, and beat the eggs well. Stir in the grated Parmigiano Reggiano.

  6. Cook the Frittata:
In a non-stick skillet, melt the butter over medium heat. Once the butter has melted, add the cooked nettles to the pan and sauté them for a few seconds to let the flavors combine.

  7. Add the Egg Mixture:
Pour the egg and cheese mixture over the nettles, ensuring it is evenly distributed. Cover the skillet with a lid to help the frittata cook evenly.

  8. Cook Slowly:
Allow the frittata to cook over low heat for about 8 minutes, or until the eggs start to set. Once the eggs are firm on the edges, flip the frittata to cook the other side.

  9. Flip the Frittata:
To flip the frittata, cover the skillet with the lid, turn it upside down, and then slide the frittata back into the pan. Cook the other side for an additional 4 minutes without the lid.

  10. Serve:
Once the frittata has set and the eggs are fully cooked, remove it from the skillet and serve warm or at room temperature.

Enjoy the delightful flavors of the nettles paired with the creamy richness of eggs and cheese, making this frittata a delicious and nutritious addition to your meal!
