- 12 boneless, skinless chicken thighs
- 2 chicken breast halves
- 4 onions
- 3 garlic cloves
- 1/2 cup roma tomatoes
- 1 mushroom
- 2 zucchinis
- 2 cups frozen spinach
- 1 tablespoon dried oregano
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 cup grated parmesan cheese

Drain the mixture in a colander and let it cool. Transfer to a large bowl and toss with 1 cup of grated parmesan cheese.

Assemble Bundles: Preheat your oven to 350Β°F (175Β°C). Lay out one sheet of phyllo dough on a clean surface and lightly oil your hands. Place another sheet of phyllo dough on top. Spoon 4 tablespoons of the veggie mixture onto the double sheets, about three inches from the edge and centered. Place a cooked chicken piece on top, followed by another 3 tablespoons of the veggie mixture.

Fold and Roll: Starting with the edge of the dough closest to you, fold it over the chicken and veggie filling, then roll one more time. Fold the ends over to create a bundle shape, then continue rolling away from yourself until you have a square packet. Place seam side down on a baking sheet lined with parchment paper. Repeat with remaining chicken and veggie mixture.
