This delightful oxtail and broccoli soup, or Sop Buntut Sapi Brokoli, is a flavorful and comforting dish that combines tender oxtail with vibrant broccoli and aromatic seasonings. Here’s how to make it in a straightforward, delicious way:

Ingredients:

  • 1/2 kg oxtail, cleaned
  • 1 stalk broccoli
  • Black pepper, to taste
  • 5 cloves red onions
  • 1 piece ginger (about 2 inches)
  • 2 stalks green onions
  • 1 cube Royco seasoning (or equivalent bouillon cube)
  • 1 tomato
  • 2 stalks celery
  • Cooking oil
  • Salt, to taste

Instructions:

  1. Prepare the Oxtail:

    • Clean the oxtail thoroughly and place it in a pot. Add enough water to cover the oxtail, and include a few smashed pieces of ginger to enhance the flavor. Bring the water to a boil, then reduce the heat and let it simmer until the oxtail is tender. This may take about 1 to 2 hours, depending on the cut and how tender you prefer your meat.
  2. Prepare the Vegetables:

    • While the oxtail is cooking, chop the green onions and celery. Slice the red onions finely. Cut the tomato into six wedges.
    • Once the oxtail is tender, add the chopped green onions, celery, and tomato to the pot. Stir in the Royco seasoning (or your preferred bouillon cube) and adjust the salt to taste.
  3. Add Broccoli:

    • Cut the broccoli into bite-sized florets. Add them to the pot and cook for an additional 5 to 7 minutes, or until the broccoli is just tender.
  4. Prepare the Garnish:

    • In a small pan, heat some cooking oil and fry the sliced red onions until they become crispy and golden brown. This will be used as a garnish for the soup.
  5. Finish and Serve:

    • Once the soup is ready, serve it hot, garnished with the crispy fried onions and a drizzle of the frying oil. This adds an extra layer of flavor and texture to the dish.
  6. Optional Accompaniments:
