Sayur Oyong with Tahu Soup: A Delightful Indonesian Dish

Ingredients:

  • 3 medium-sized oyong (ridge gourd), peeled and sliced
  • 4 shrimp, peeled and deveined
  • 1 package of tahu soup mix (vegetable flavor), fried or not as preferred
  • 1 small tomato, chopped
  • Salt to taste
  • For the spice paste:
    • 3 shallots
    • 2 garlic cloves

Instructions:

  1. Prepare the Spice Paste: Begin by finely grinding the shallots and garlic cloves into a smooth paste using a mortar and pestle or a food processor. This paste will form the flavor base of your dish.

  2. Sauté the Spice Paste: Heat a generous splash of oil in a large skillet or saucepan over medium heat. Add the ground spice paste and sauté until it becomes fragrant and slightly golden.

  3. Cook the Shrimp: Add the shrimp to the pan with the aromatic paste. Cook, stirring occasionally, until the shrimp turn pink and are cooked through.

  4. Add the Oyong: Stir in the sliced oyong. Sauté briefly to combine the flavors.

  5. Adjust Consistency: Pour in enough water to cover the ingredients. Allow it to simmer gently so the flavors meld together.

  6. Incorporate Tomato: Add the chopped tomato to the pot. Stir well and let it cook for a few minutes until the tomato begins to soften.

  7. Add Tahu Soup Mix: Gently add the tahu soup mix to the pot. If you opted to fry the tahu beforehand, add it now. Cook the mixture until the tahu is thoroughly heated and the vegetables are tender.
