Stir-Fried Chicken Fillet in Oyster Sauce

Ingredients:

  • 1/2 kg chicken fillet (choose a meaty part)
  • 1 teaspoon coriander seeds
  • 1 teaspoon black pepper
  • 3 cloves garlic
  • Sweet soy sauce (to taste)
  • Soy sauce (to taste)
  • Oyster sauce (to taste)
  • Cooking oil (for frying)

Instructions:

  1. Prepare the Chicken: Begin by cleaning the chicken fillet thoroughly. Cut it into bite-sized pieces and set it aside to drain.

  2. Blend the Spices: In a mortar and pestle or a spice grinder, finely grind the coriander seeds, black pepper, and garlic cloves until you have a smooth spice blend.

  3. Marinate the Chicken: In a mixing bowl, combine the freshly ground spice blend with the chicken pieces. Add sweet soy sauce, soy sauce, and oyster sauce according to your taste preference. Mix well to ensure all the chicken pieces are evenly coated with the marinade. Let it marinate for approximately 5 minutes to allow the flavors to meld.

  4. Cook the Chicken: Heat a pan over medium heat and add a suitable amount of cooking oil. Once the oil is hot, add the marinated chicken to the pan. Stir-fry the chicken, ensuring it is evenly cooked and the sauce is well absorbed. If necessary, add a splash of water to help cook the chicken thoroughly and keep the sauce from burning. Adjust the seasoning to taste.
