Ingredients
- 1/2 lb ground sausage
- 1 1/2 cups onions, chopped
- 2 cups celery, chopped
- 12 oz jar of oysters, drained and chopped
- 2 tsp salt
- 1/4 tsp pepper
- 1 tsp savory
- 1 tsp dried sage
- 1 tsp ground sage
- 1 tsp dried thyme leaves
- 1 cup chicken broth
- 2 eggs
Instructions
Step 1: Prepare the Sausage
- In a large frying pan, sauté the ground sausage meat over medium heat, stirring occasionally to break it up, until it is lightly browned and cooked through.
Step 2: Combine Ingredients
- Using a slotted spoon, transfer the cooked sausage to a large mixing bowl, leaving behind any excess grease in the pan.
- In the same pan with the drippings (add a little butter if necessary), sauté the chopped celery and onions until they are tender, which should take around 8 to 10 minutes.
Step 3: Mix the Ingredients
- Add the sautéed celery and onions to the bowl with the cooked sausage.
- To the same bowl, add the chopped oysters, salt, pepper, savory, dried sage, ground sage, and dried thyme leaves. Mix all the ingredients together until well combined.
Step 4: Add Liquid Ingredients
- Pour in the chicken broth and crack the eggs into the mixture.
- Thoroughly mix everything together until the ingredients are evenly distributed.
Step 5: Adjust Consistency
- If the stuffing mixture seems too dry, you can add a little water until you reach your desired consistency. However, be cautious not to make it too wet, as the turkey will contribute moisture during the cooking process.
Step 6: Stuff the Turkey
- This stuffing is intended to be used to stuff a 10-12 lb turkey. Carefully spoon the prepared stuffing mixture into the cavities of the turkey, ensuring not to pack it too tightly to allow for even cooking.
