  2. Prepare Protein: Peel and devein shrimp, leaving tails intact. If using chicken and/or pork, cut into 1/8 inch x 1 inch pieces.

  3. Create Sauce: Mix fish sauce, sugar, vinegar, and tomato paste until sugar dissolves. Set aside.

  4. Slice Scallions: On the diagonal, slice scallions into 1/4-inch thickness. Set aside.

  5. Stir-fry Meat: Heat a wok, add oil, and stir-fry meat and garlic until the meat is cooked and no longer pink. Add drained noodles, stir to coat with oil, then add the sauce, stirring carefully to avoid breaking the noodles.

  6. Add Eggs: Push noodles aside, add eggs, let them set a bit, then break them up and continue stir-frying. Add more oil if needed to prevent sticking. Toss until eggs are evenly distributed.

  7. Final Touch: Add 3/4 cup peanuts, bean sprouts, and scallions. Toss until well combined.
