Asam Padeh Ikan Tongkol Khas Padang (Family Recipe)

Asam Padeh Ikan Tongkol is a beloved dish from Padang, known for its bold flavors and aromatic spices. This recipe, passed down through generations, showcases the rich culinary traditions of Indonesia. The combination of fresh ingredients and spices creates a savory, tangy experience that will delight your taste buds.

Ingredients

Ingredient Quantity
Ikan tongkol (skipjack tuna) 1 kg, cleaned and washed
Daun kunyit (turmeric leaves) 2 leaves (or 1 large)
Lengkuas (galangal) 2 thumb-sized pieces, bruised
Asam kandis (dried tamarind) 5 pieces
Water 1500 ml
Salt To taste
Daun jeruk (lime leaves) 1 leaf, midrib removed
Daun salam (Indonesian bay leaves) 1 leaf
Sereh (lemongrass) 1 stalk, bruised
Spice Paste
Cabe merah keriting (red chili) 100 grams (10 pieces)
Bawang merah (red onion) 6 cloves
Bawang putih (garlic) 3 cloves
Jahe (ginger) 1 thumb-sized piece

Instructions

  1. Prepare the Spice Base: In a large pot or saucepan, combine 1500 ml of water with the spice paste ingredients—red chili, red onion, garlic, and ginger. Blend until smooth to create a fragrant base.

  2. Add Aromatics: Add the turmeric leaves, bruised galangal, dried tamarind, lime leaves, bay leaf, and bruised lemongrass into the pot. Stir gently to mix the ingredients.

  3. Bring to a Boil: Turn on the heat and bring the mixture to a boil. Stir occasionally to ensure even cooking.

  4. Cook the Fish: Once boiling, carefully add the cleaned ikan tongkol into the pot. Season with salt to taste. Allow the fish to simmer gently, cooking thoroughly and allowing the flavors to meld beautifully.

  5. Finishing Touches: Continue to cook the dish for a longer period to ensure all spices are well blended and aromatic. The longer it simmers, the deeper and richer the flavors become. Some even prefer it after it has been reheated multiple times, as the sauce thickens and the taste intensifies.

  6. Serve: Once cooked, remove the pot from the heat and serve your Asam Padeh Ikan Tongkol warm. It pairs wonderfully with steamed rice.
