Tumis Pakis with Tempe and Tahu Stir-Fry

Ingredients

Tumis Pakis:

Ingredient Amount
Young pakis (fern) 2 large bunches (approx. 300g)
Garlic 4 cloves, crushed with a pinch of salt
Shallots 5, sliced
Onion 1/2, long sliced
Galangal 1 small piece
Red chili 1 large, sliced diagonally
Bird’s eye chili 3, thinly sliced
Oyster sauce 1-2 tablespoons
Tomato 1 medium, sliced
Spring onion 1 stalk, sliced
Sugar 1/2 teaspoon
Powdered broth To taste
Ground pepper 1/4 teaspoon
Water 150 ml

Tempe and Tahu Stir-Fry:

Ingredient Amount
Tempe 1 piece (approx. 200g), cubed and fried until golden
Tahu (tofu) 6 pieces, cubed and fried until golden
Galangal 1 small piece, crushed
Red chili 1, sliced diagonally
Onion 1/2, long sliced
Soy sauce 2 tablespoons
Sugar 1 teaspoon (adjust to taste)
Salt 1/2 teaspoon
Ground pepper 1/4 teaspoon
Water 150 ml
Tomato 1 medium, sliced
Basil A handful

Blended Spices:

Ingredient Amount
Red chili 2 large
Shallots 6
Garlic 4 cloves
Oil A little, for blending

Instructions

Tumis Pakis:

  1. In a hot pan, sauté the crushed garlic, shallots, onion, and galangal until fragrant and softened.
  2. Add the sliced tomato and chilies, stirring well for a brief moment.
  3. Introduce the pakis, stirring to mix thoroughly. Pour in some water and season with salt, sugar, powdered broth, ground pepper, and oyster sauce.
  4. Allow the mixture to boil, adjusting the flavor to your preference. Wait until the water is absorbed and the pakis are wilted. Just before removing from heat, add the sliced spring onion.

Tempe and Tahu Stir-Fry:

  1. In another pan, sauté the blended spices, onion, and galangal until fragrant and softened.
  2. Add the sliced red chili, followed by the fried tempe and tahu, stirring to combine with the spices.
  3. Pour in water and soy sauce, seasoning with sugar, salt, ground pepper, and powdered broth.
  4. Allow to boil, tasting and adjusting as needed. Wait until the mixture is well-combined and the water is nearly evaporated. Just before serving, add the sliced tomato and basil.
