Instructions
For the Pancakes:
- Start by preparing the pancake batter. Melt the butter over very low heat and set it aside to cool slightly.
- In two separate bowls, separate the egg yolks from the whites. Whisk the egg whites with baking soda until stiff peaks form, using a hand whisk.
- Slowly pour the milk into the egg whites, mixing constantly with the whisk to incorporate smoothly.
- Gradually add a couple of tablespoons of flour into the mixture, stirring well. Continue adding flour little by little while mixing until you have a smooth, homogenous batter.
- Carefully fold in the egg whites into the batter in small batches, using a spatula and gently incorporating from the bottom up, ensuring the air in the whites remains intact.
- Heat a non-stick pan over low heat and lightly grease it with a bit of butter. Use a paper towel to remove any excess fat.
- For each pancake, drop a full tablespoon of batter into the pan. Cook for 2-3 minutes on each side, flipping when the edges start to set and the bottom is golden brown.
- Continue cooking the pancakes, greasing the pan lightly with butter as needed. This recipe will yield about 16 pancakes. Stack them on a plate as you go along.
For the Grana Padano Sauce:
- In a small saucepan, melt the butter over medium heat.
- Once the butter is melted, add the whole milk and stir. Bring the mixture to a boil while stirring frequently to prevent curdling.
- Once it reaches a boil, add a pinch of black pepper and stir in the Grana Padano DOP. Continue stirring until the cheese is completely melted and the sauce becomes smooth and creamy.
- If the sauce is too thick, you can add a bit more milk to reach your desired consistency.
- Once the sauce is ready, serve it immediately alongside the savory pancakes.
