Ikan Patin Bumbu Kuning: A Delicious Indonesian Dish

Ingredients

  • 500 grams Patin fish (ikan patin)
  • 3 cloves garlic (bawang putih)
  • 5 shallots (bawang merah)
  • 1 cm turmeric (kunir)
  • Salt and sugar to taste (secukupnya garam & gula)
  • 1 teaspoon coriander (ketumbar)
  • 1 stalk lemongrass, crushed (serai geprek)
  • 2 kaffir lime leaves (daun jeruk)
  • 2 candlenuts (kemiri)
  • 2 tomatoes, sliced (tomat iris²)
  • Fresh kemangi leaves (daun kemangii), to taste
  • Chili peppers (optional, for spice) (lombok)

Instructions

  1. Prepare the Fish: Begin by frying the patin fish until it is golden brown and cooked through. Set aside on a plate to drain excess oil.

  2. Make the Spice Paste: In a blender or food processor, combine the shallots, garlic, turmeric, sugar, salt, and coriander. Blend until smooth to create a fragrant spice paste.

  3. Sauté the Spices: In a pan, heat a sufficient amount of oil over medium heat. Once the oil is hot, add the blended spice paste and sauté until aromatic and lightly browned.

  4. Add Aromatics: Incorporate the crushed lemongrass, kaffir lime leaves, and sliced tomatoes into the sautéed spices. Stir gently, allowing the flavors to meld together.

  5. Simmer with Water: Add enough water to the pan, stirring carefully to combine. Allow the mixture to simmer for a few minutes, ensuring it cooks evenly.

  6. Introduce the Fish: Gently place the fried patin fish into the pan, allowing it to soak in the rich flavors of the sauce. Wait until the mixture reaches a boil.

  7. Final Touches: Add the fresh kemangi leaves for a fragrant finish. Taste and adjust seasoning as needed, stirring gently to avoid breaking the fish apart.

  8. Serve: Once everything is combined and heated through, serve the Ikan Patin Bumbu Kuning warm, alongside steamed rice for a delightful meal that highlights the vibrant flavors of Indonesian cuisine.
