If you’re a fan of Peking duck, this Peking chicken (or pork) wrap is sure to delight! While it’s not exactly the same, it’s a delicious sandwich that satisfies those cravings with its savory and slightly sweet flavors. Perfect for lunch or a quick snack, these wraps are easy to make and packed with flavor.

Ingredients:

  • 1 cup hoisin sauce
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup honey
  • 1 tbsp grated gingerroot
  • 4 cloves garlic, minced
  • 1/2 tsp sambal oelek (chili paste)
  • 1 lb chicken breast or pork loin, thinly sliced
  • 8 (8-inch) flour tortillas
  • 2 green onions, thinly sliced

Instructions:

  1. Prepare the Sauce:

    • In a medium bowl, mix together hoisin sauce, soy sauce, rice vinegar, honey, grated gingerroot, minced garlic, and sambal oelek until well combined.
  2. Marinate the Meat:

    • Reserve 1 cup of the hoisin sauce mixture for later use.
    • Add the thinly sliced chicken or pork to the remaining sauce mixture in the bowl. Stir well to coat.
    • Cover and marinate in the refrigerator for at least 2 hours, up to 8 hours, stirring occasionally.
  3. Cook the Meat:

    • Heat a large nonstick skillet over medium heat and coat with olive oil.
    • Add half of the marinated chicken or pork to the skillet, ensuring not to overcrowd the pan.
    • Cook for about 5 minutes, stirring occasionally, until the meat is cooked through and nicely seared.
    • Remove the cooked meat from the skillet and set aside.
    • Repeat with the remaining batch of chicken or pork, adjusting olive oil as needed, and ensuring to wash the pan between batches if necessary.
  4. Assemble the Wraps:

    • Warm the flour tortillas according to the package directions.
    • Spread about 2 tablespoons of the reserved hoisin sauce mixture down the center of each tortilla.
    • Arrange a portion (1/8th) of the cooked chicken or pork slices and 2 tablespoons of sliced green onions down the center of each tortilla.
    • Roll up the tortillas tightly to form wraps.
  5. Serve:

    • Cut each wrap in half diagonally, if desired, and serve immediately.
