Plus, we’ve streamlined the process by using instant mashed potatoes and skipping the hassle of lasagna noodles. It’s a hearty, comforting dish that will satisfy your cravings for something warm and savory!

Ingredients:

  • 1 package instant mashed potatoes
  • 6-8 tablespoons butter
  • 2 cups shredded cabbage
  • 3 slices bacon
  • 1 cup sauerkraut, drained
  • 1 onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces cheddar cheese, shredded
  • Egg roll wrappers

Instructions:

  1. Prepare Cabbage-Sauerkraut Mixture:

    • In a skillet, melt 2 tablespoons of butter over medium heat.
    • Add diced onion and cook until golden brown.
    • Stir in the drained sauerkraut, shredded cabbage, salt, and pepper.
    • Cook for 5 minutes, allowing the flavors to meld together. Set aside.
  2. Cook Bacon and Onions:

    • In a separate skillet, cook the bacon until crispy.
    • Remove the bacon from the skillet and set aside.
    • In the same skillet, add diced onions and cook until caramelized.
  3. Preheat Oven:

    • Preheat your oven to 350°F (175°C).
  4. Assemble the Casserole:

    • Spread 1/3 of the mashed potatoes evenly in the bottom of a 9×13-inch baking dish.
    • Sprinkle with 1/3 of the shredded cheddar cheese.
    • Layer egg roll wrappers over the cheese, cutting them to fit if necessary.
    • Next, layer on the cooked bacon and caramelized onions.
    • Spread another 1/3 of the mashed potatoes over the bacon mixture.
    • Add half of the remaining shredded cheddar cheese on top.
    • Layer more egg roll wrappers over the cheese.
    • Spread the cabbage-sauerkraut mixture evenly over the egg roll wrappers.
    • Top with another layer of egg roll wrappers.
    • Spread the remaining mashed potatoes over the egg roll wrappers.
    • Finish with a final layer of egg roll wrappers.
    • Sprinkle the remaining shredded cheddar cheese on top.
  5. Bake:

    • Place the casserole in the preheated oven and bake for 30-40 minutes, or until the cheese is melted and bubbly.
  6. Serve:

    • Remove the casserole from the oven and let it cool for a few minutes.
    • Slice into squares and serve hot, with a dollop of sour cream on top.
