Ingredients:
- 8-10 potatoes
- 2 kielbasa or Polish sausages
- 1 tablespoon butter
- 2 tablespoons sugar
- 5 tablespoons all-purpose flour
- 4 teaspoons salt
- 1 teaspoon ground mustard
- 1/2 teaspoon celery seed
- 3/4 cup chicken broth
- 1/3 cup cider
- 1 tablespoon white wine vinegar
- 1 red onion
- 1/2 cup celery
- 1/4 cup parsley
Instructions:
1. Prepare the Potatoes:
- Begin by cooking the potatoes just until they’re tender. Once done, drain them and allow them to cool. Once cooled, peel and slice the potatoes into thin slices, then set them aside for later use.
2. Cook the Sausages:
- In a large skillet, cook the kielbasa or Polish sausages until they’re no longer pink. Once cooked through, remove them from the skillet and cut them into ΒΌ-inch slices. Set the slices aside for now.
3. Prepare the Sauce:
- In the same skillet used to cook the sausages, add the butter, sugar, salt, ground mustard, and celery seed. Cook and stir over medium heat until the mixture is hot and bubbly.
4. Thicken the Sauce:
- Gradually add the chicken broth and vinegar to the skillet, stirring constantly. Bring the mixture to a boil and continue to cook and stir until the sauce thickens to your desired consistency.
5. Combine Ingredients:
- Gently stir in the sliced onions, celery, parsley, cooked potatoes, and sausage slices into the thickened sauce mixture in the skillet.
6. Heat and Serve:
- Heat the entire mixture through until it’s warmed to your liking. Once heated through, your Polish Potato Salad is ready to be served!
