Ikan Bawal in Tauco Sauce

Ingredients:

  • 1/2 kg pomfret fish (ikan bawal), cleaned, seasoned with salt and lime juice
  • 5 pieces of tofu, cubed and fried
  • 1 tablespoon tauco (fermented soybeans)
  • 8 cloves garlic, crushed
  • 1 cm ginger, crushed
  • 8 bird’s eye chilies, sliced diagonally
  • 2 red chili peppers, sliced diagonally
  • 3 stalks green onions, sliced diagonally
  • 1 tablespoon cornstarch, dissolved in 800 ml water
  • 3 tablespoons chili sauce

Steps:

  1. Sauté Aromatics: In a pan, heat a little oil and sauté the crushed garlic, ginger, and sliced chilies until they are aromatic and slightly softened.

  2. Add Tauco: Stir in the tauco and cook until its fragrance is released, allowing the flavors to meld.

  3. Incorporate Cornstarch Mixture: Add the cornstarch mixture and bring to a simmer. This will help thicken the sauce.

  4. Finish the Sauce: Mix in the sliced green onions and chili sauce. Continue cooking until the sauce has thickened to your desired consistency.

  5. Combine with Fish: Turn off the heat and pour the tauco sauce over the pre-seasoned and fried pomfret fish. Ensure the fish is well-coated with the flavorful sauce.

  6. Final Touches: Note that no additional salt is added to this dish, as tauco already provides sufficient seasoning.
