Instructions
To begin, prepare the broth. Start by cleaning and peeling the vegetables. Slice the spring onions into thin rounds. Peel and cut the ginger into slices. In a large pot, heat a drizzle of extra virgin olive oil over medium heat. Add the chopped vegetables and ginger to the pot and sautรฉ for a few minutes until the flavors are released.
Next, pour in the water and season the mixture with coarse salt and whole black peppercorns. Allow the broth to simmer over low heat for about 30 minutes. During this time, the flavors will blend and the broth will develop a rich taste.
While the broth is simmering, prepare the pork meatballs. Soak the stale bread in the whole milk at room temperature until softened. Once soaked, squeeze out the excess milk from the bread and place it in a mixing bowl. Add the ground pork, grated Grana Padano cheese, finely chopped fresh thyme, and rosemary. Season with fine salt and black pepper to taste. Mix everything together and form small meatballs, about 3 cm in diameter, using your hands.
Once the broth is ready, strain it into a separate bowl, discarding the solid vegetables and spices. In the same pot, heat another drizzle of olive oil over medium heat and carefully add the meatballs. Cover the pot and cook the meatballs for about 10 minutes over a medium-low flame. After 10 minutes, remove the lid, allowing the meatballs to finish cooking and absorb the flavors of the broth for another 5 minutes.
To serve, ladle the hot, strained broth into bowls, adding the cooked meatballs on top. Garnish with freshly chopped parsley and enjoy this comforting dish.
