Ingredients

Instructions

  1. Trim the pork tenderloins of excess fat and cut into 1-inch cubes.

  2. In a large nonstick skillet, heat 2 teaspoons of olive oil over medium heat.

  3. When hot, add the shallot, garlic, and bell peppers. Sautรฉ for 10 minutes, until very soft.

  4. Remove from the pan.

  5. Put the remaining teaspoon oil in the pan and heat.

  6. Add the pork and brown.

  7. Stir in the paprika, ground cumin, cumin seeds, and salt; stir for 1 minute.

  8. Put the shallot, garlic, and peppers back into the pan.

  9. Add the broth, wine, and lemon slices.

  10. Cover and simmer for 20 to 25 minutes, or until the pork is cooked through and tender; stir occasionally.

  11. Remove the lemon slices.

  12. Add fresh lemon juice, pepper, cilantro, and almonds if using.

  13. Serve the ragout with rice or egg noodles.
