Begin by boiling a large pot of water, which will be used to prepare the potatoes. In the meantime, clean the bell peppers: wash them thoroughly under running cold water and dry them with paper towels. Cut off the tops of the peppers and remove the white ribs and seeds inside. Then, slice the peppers into thin strips, about 0.5 cm wide.

Peel the potatoes and slice them into thin rounds.

Finely chop the shallot and sauté it in a large, non-stick pan with extra virgin olive oil. Once the shallot becomes translucent, add the hot vegetable broth to the pan.

Add the sliced potatoes to the pan, seasoning them with a pinch of salt. Cook over medium heat, stirring occasionally, until the potatoes soften.

While the potatoes are cooking, crack the eggs into a separate bowl, season with salt and pepper, and add marjoram and thyme. Whisk the eggs until all ingredients are well combined.

Once the potatoes are cooked and tender, add the prepared bell peppers to the pan. Continue to cook for a few more minutes until the peppers soften.

Pour the beaten eggs evenly over the potatoes and peppers in the pan. Allow the eggs to set for a few minutes on low heat, making sure the frittata begins to firm up around the edges.

Cover the pan with a lid and cook for an additional 10-15 minutes, until the eggs are fully set. If needed, carefully flip the frittata using a plate to finish cooking the other side.
