Potato Crepes with Brie and Ham

All-purpose flour 100g
Cooked ham 200g
Brie 200g
Red onions 1
Extra virgin olive oil 2 tbsp

Directions:

Step 1: Prepare the Potato Mixture
Start by peeling and cutting the potatoes into cubes. Set them aside for the next step.
Peel and thinly slice the red onion. In a pan, add a little extra virgin olive oil and sauté the onions over low heat for about 5 minutes until they become soft and translucent. Once the onions are soft, add the diced potatoes to the pan and season with salt. Increase the heat to medium and cook the potatoes for approximately 10 minutes, stirring occasionally, until they soften. Once tender, turn off the heat and gently mash the potatoes with a fork. Set the mixture aside.

Step 2: Make the Crepe Batter
In a separate bowl, crack the egg and whisk it together with a pinch of salt and the milk. Continue whisking until well combined. Gradually add the flour, stirring constantly to form a smooth, fluid batter. Adjust the amount of flour if necessary to achieve the desired consistency of the batter.

Step 3: Cook the Potato Crepes
In a small pan (approximately 20 cm in diameter), melt a small knob of butter. Add about a quarter of the mashed potato mixture to the pan, spreading it out evenly across the bottom. Pour a ladleful of the batter over the potatoes, covering them evenly.
Cook the crepe over medium heat until the edges begin to lift, about 3–4 minutes. Carefully flip the crepe over using a spatula and cook for another 2 minutes until golden and slightly crispy. Once done, remove the crepe from the pan and place it on a plate. Repeat the process with the remaining ingredients, making sure to add a bit of butter for each new crepe.

Step 4: Assemble the Crepes
Once all the crepes are cooked, take slices of Brie cheese and the cooked ham and place them on one side of each crepe. Fold the crepe over the filling to form a half-moon shape.

Step 5: Serve and Enjoy
Serve your delicious potato crepes with Brie and ham while they’re still warm, accompanied by a fresh green salad on the side for a perfect balance of flavors. Enjoy!
