Preparation Instructions for Puff Pastry Pizzettes

  1. Prepare the Ingredients
    Begin by preparing all the ingredients you’ll need to fill the pizzettes. Slice the pitted black olives into thin rings. Cut the provola cheese into small cubes. In a small bowl, whisk the egg using a fork, making sure it is thoroughly beaten.

  2. Prepare the Puff Pastry Base
    Roll out the puff pastry and, using a round cookie cutter (approximately 6 cm in diameter), cut out 21 small discs. Place these discs on a baking sheet lined with parchment paper. Use a fork to lightly prick the center of each disc to prevent puffing up during baking. Brush each puff pastry disc with the beaten egg to give it a golden finish when baked.

  3. Assemble the Pizzettes
    Now, it’s time to add the toppings:

    • For 10 pizzettes, place about half a teaspoon of tomato passata in the center of each, leaving a small border around the edge. Add 4-5 cubes of provola cheese on top of the tomato.
    • For 5 pizzettes, add the sliced black olives and pickled capers in place of the tomato sauce and cheese.
    • For the next 5 pizzettes, sprinkle a pinch of dried oregano in the center of each.
    • For the remaining 5 pizzettes, add half a teaspoon of pesto in the center of each and top with 4-5 cubes of provola cheese.
    • Lastly, for the final 6 pizzettes, place 4-5 cubes of provola cheese in the center of each and top with an anchovy fillet.
  4. Bake the Pizzettes
    Preheat your oven to 200°C (400°F). Place the prepared pizzettes in the oven and bake for 12-15 minutes or until the edges of the puff pastry are golden and crispy.

  5. Serve
    Once baked, remove the pizzettes from the oven and let them cool slightly. Serve them warm or at room temperature as a tasty appetizer for your guests. These puff pastry pizzettes are best enjoyed fresh but can be stored in an airtight container for a day or two.
