Instructions

  1. Prepare the Delica Pumpkin: Start by cleaning the pumpkin. Cut it into slices and then into small cubes. Next, chop it roughly to break down the texture.

  2. Cook the Pumpkin: Heat a drizzle of olive oil in a pan, add the pumpkin, and season with a pinch of salt. Cook for about 10 minutes until tender. Remove from heat and allow it to cool down completely.

  3. Prepare the Cheese and Spices Mix: While the pumpkin cools, mix the Grana Padano DOP cheese and turmeric powder in a bowl. Stir with a spoon until the mixture is homogeneous. Set this aside for later.

  4. Prepare the Egg Mixture: In another bowl, crack the egg and add the fresh cream (or substitute with milk). Whisk to combine.

  5. Assemble the Puff Pastry: Unroll one sheet of puff pastry and brush it entirely with the egg and cream mixture. Spread the cooked pumpkin mixture evenly across the surface of the pastry.

  6. Add the Flavoring: Sprinkle the turmeric and Grana Padano cheese mixture over the pumpkin. Season with a pinch of black pepper and break the wild fennel into small pieces, scattering it on top.

  7. Shape the Puff Pastry Angels: Cut the pastry into strips about 3 cm wide. Carefully roll each strip into a spiral shape, forming a ring. Repeat the process with the remaining strips, creating a total of 11 mini puff pastry angels.

  8. Bake: Place the spirals on a baking tray, leaving a little space between each one. You may need to use two trays depending on the size of your tray. Brush the top of each with the remaining egg and cream mixture.

  9. Final Touches: Bake in a preheated oven at 180°C (350°F) for about 15-20 minutes or until golden and crisp.
